Moroccan Lamb Tagine

The Perfect Moroccan Lamb Tagine

This Moroccan lamb tagine recipe means you can prepare it in the morning before you head out for the day, and return home in the evening with a delicious dinner ready to serve.

How it’s done

  1. In a frying pan, add a little oil and brown the lamb over a medium/high heat.
  2. Add all the ingredients to a slow cooker and cook on a low or auto setting for approximately 8 hours until the meat is tender and cooked through.
  3. If you feel the dish needs thickening, cook uncovered for a further 10 minutes.
  4. Serve the dish with a scattering of coriander leaves and cous cous.

What you'll need

  • 500g Diced lamb
  • 1 Red onion, sliced
  • 1 Aubergine, chopped
  • 1 Handful coriander leaves
  • 100g Mixed dried fruits
  • 1 Cinnamon stick
  • 2 tsp Ground cumin
  • 2 tsp Ground coriander
  • 4 Garlic cloves
  • 1 Red chilli, crushed
  • 1 Thumb sized piece of ginger, finely chopped
  • 1 tbsp Ground almonds
  • 1 tsp Lemon zest
  • 400g Can chopped tomatoes
  • 500ml Chicken stock

Slow cookers are ideal to use if you find it hard to find the time to cool a delicious, home-cooked meal.  If you’re cooking on a budget, you can use cheaper cuts of meat as slow cooking tenderises the meat and allows the flavours to fully develop.
